And no, not a chicken Caesar salad—rather, its just-as-delicious, lighter second cousin: chicken salad! If you want a filling, quick lunch and you’re tired of the same old turkey sandwich, you’re in luck!

This easy recipe comes together in 20 minutes tops and is packed with flavor. I like mine on the sweeter side, so more honey and craisins are always a good time (not a big fan of pecans, but if they’re your jam, go for it!). Pile it onto a large toasted croissant and voilà! A perfect meal on the go. Let’s get to it!


THE GOODS – Ingredients:

  • 2 canned chicken breasts (12.5 oz.) or cooked, shredded chicken breast
  • ¾ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • ⅓ cup honey (or more, if you love it sweet!)
  • 1 cup craisins
  • Salt & pepper (liberal amount)
  • Splash of olive oil
  • Optional: 1 cup roasted pecans (halved or chopped)
  • Optional: 1 cup of red grapes (halved)

THE ACTION – Instructions:

1️⃣ Mix all ingredients thoroughly in a large bowl, then refrigerate.
2️⃣ Spread on a toasted croissant, a Hawaiian roll, or enjoy with crackers!
