Why didn’t the chicken like the trampoline?

Because he lost his cousin to “Crack-the-Egg.” 🐣

It’s officially springtime in mid-May, and that means the weather’s warming up (kinda), the clouds are still hanging around some days, the flowers are making me sneeze non-stop, and our immune systems are now getting a boost from a fun little bug making its rounds post-travel (yay us!).

While we’re on the tail-end of recovery, I went searching for a good meal prep option that would:

A. Boost our immune systems
B. Sound appetizing, even to sick tastebuds
C. Be nutrient-packed and easy to warm up

Wouldn’t you know it — the perfect detox chicken soup popped up, and of course I had to put my own spin on it and share it with y’all.

Between the fresh garlic, ginger, veggies, and savory broth, I love how clean and healing this soup feels. Especially if you have kiddos, this is a total immune-loving reset.

So, time to get crackin’ (see what I did there? 😉)…


🥄 THE GOODS — Ingredients:

  • 1 lb chicken breast
  • Olive oil
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 4 cups chicken broth (32 oz)
  • 2 cups broccoli florets (bite-sized)
  • 2 cups cauliflower florets (bite-sized)
  • 3 cloves fresh garlic, minced
  • 1 tsp fresh ginger, minced
  • 1 tsp garlic salt
  • 1 tsp black pepper
  • 1 tsp dried basil
  • 1 tsp red pepper flakes
  • 1 tsp paprika
  • 2 tbsp lemon juice

🔥 THE ACTION — Instructions: 

1️⃣ Prep & Sauté:
In a large pot, sauté the onion, garlic, and ginger in olive oil for 3–4 minutes until fragrant and translucent.

2️⃣ Veggies:
Add the bell pepper, all seasonings, and a splash of chicken broth. Cook for 3 more minutes to let flavors bloom.

3️⃣ Meat:
Add the chicken breasts and remaining chicken broth. Cover and simmer gently for 20 minutes — avoid high heat to keep the chicken tender.

4️⃣ Shred:
Remove chicken, shred with two forks, and return it to the pot. Stir in broccoli and cauliflower, then simmer for another 10 minutes until the veggies are just tender.

5️⃣ Finish:
Remove from heat, stir in lemon juice, and serve warm!


We made a double batch, and it’s officially in our meal prep rotation! One of my favorite parts is how customizable it is — mix and match your veggies however you like. For instance, celery is banned in our house (sorry, it’s a no from me dawg), but if you love it, go for it! Next time, I’m planning to throw in some carrots and peas for more veggie fun.
