This week’s meal prep was totally unplanned—more of a “let’s see how this goes”—and spoiler alert: it didn’t disappoint! I needed something quick, easy, and filling enough to work for a solid family dinner. So what’s on the menu? You guessed it—turkey meatball bowls. (Think Cafe Yumm-inspired, but with a little more protein punch.) Plot twist: These are actually my Sriracha Turkey Meatballs—just hold the sriracha. Click here if you want the spicy version!
What I love about this dish is how customizable it is. You can mix and match veggies, grains, and sauces based on what you’ve got on hand. I used an authentic Cafe Yumm sauce I found at WinCo, but honestly, a good tzatziki works great too. And don’t sleep on hummus—it takes it up a notch!
I paired everything with steamed rice (though quinoa or even roasted potatoes would work!). The veggie prep took the most time, but the make-your-own-bowl setup was a total win for meal prep. 🧆

THE GOODS — Ingredients 🍽️
For the Meatballs:
- 2 lb ground turkey
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon paprika
- ½ teaspoon dried basil
- 1 cup panko breadcrumbs
- 2 eggs
For the Bowls:
- 2 yellow bell peppers, diced
- 1 red bell pepper, diced
- 1 small red (purple) onion, diced
- 1 English cucumber, sliced and halved
- 1 cup cherry tomatoes, halved
- 1 head of broccoli, cut into florets
- Steamed rice (white or brown)
- Olive oil (for roasting or sautéing)
- Hummus
- Café Yumm Sauce (or your favorite dressing or sauce)
THE ACTION — Instructions
1️⃣ Make the Meatballs:
In a large bowl, mix together the ground turkey, panko breadcrumbs, eggs, garlic salt, black pepper, salt, paprika, and basil until fully combined.
Roll the mixture into 1½-inch balls and place them on a parchment-lined baking sheet (or spray with non-stick cooking spray).
2️⃣ Bake:
Preheat your oven to 375°F and bake the meatballs for 23–25 minutes, or until golden and cooked through.
3️⃣ Build Your Bowl:
Layer your bowl with rice, fresh veggies, meatballs, and a scoop of hummus. Drizzle with Café Yumm Sauce (or your favorite!) and enjoy!

💡 Meal Prep Tip:
These bowls keep really well in the fridge for 3–4 days. Pro tip: store the sauce and hummus separately so your veggies stay fresh and your rice doesn’t get soggy. Trust the process. 😉
