If you’re looking for a soup that’s hearty, healthy, and packed with flavor, you just found it! Think spaghetti sauce… but make it soup 🥣. Even with the summer heat, this is perfect for lunches, light dinners, and meal prep for the week (yes, please!🥄).
The best part? It’s quick and easy to prep—just chop up your veggies and toss it all into a big pot. I’ve lovingly dubbed this my “Ratatouille Soup” because it totally reminds me of our favorite tiny chef (shoutout to the best Pixar movie ever 🐭👨🏼🍳). And yes, I’m absolutely thinking of that scene where Remy tastes the strawberry and the flavors start dancing in his mind with musical notes. Iconic.
Okay, let’s get into it—this one’s a crowd-pleaser!
🥣 THE GOODS — Ingredients:
- 1 tablespoon extra-virgin olive oil
- 1 pound ground Italian sweet sausage
- 2 cups onion, chopped
- 1 large red bell pepper, diced
- 2 garlic cloves, minced
- ½ teaspoon of red pepper flakes
- ¼ cup tomato paste
- 2 pounds zucchini, diced
- 5 fresh plum tomatoes, diced
- ½ teaspoon ground black pepper
- 2 quarts low-sodium chicken broth or vegetable broth
- 2 tablespoons chopped fresh basil
- Dash of paprika
- ½ teaspoon of thyme
- Parmesan cheese to top it off
🔥 THE ACTION — Instructions:
1️⃣ Cook the Meat:
In a large pot, cook the Italian sausage until browned. Add in chopped onion and bell pepper, and sauté until soft.
2️⃣ Build the Flavor:
Stir in garlic, red pepper flakes, and tomato paste. Cook for a minute or two, then add the zucchini, diced tomatoes, chicken broth, basil, thyme, paprika, and black pepper. Mix it all together.
3️⃣ Simmer Time:
Bring the soup to a simmer and cook for about 10–15 minutes, until the veggies are tender and everything smells amazing.
4️⃣ Serve & Savor:
Ladle into bowls and garnish with fresh basil and a generous sprinkle of parmesan. Yum!
