
Somebody grab a jacket, because it’s about to get chili! 🥶
When winter rolls around, my husband and I love a hearty, warm stew or soup (our daughter isn’t eating solids yet, but I know she’ll be a fan one day!). (I’ve always been a soup kinda gal) I usually cook enough for the whole week and just keep the pot in the fridge—easy meal prep at its finest! Whether it’s lunch or dinner, it’s a quick way to pour a bowl and feel full – plus it helps with the grocery budget!

This no bean chili recipe has been a constant staple rotation for the last handful of months, and I’ve even made it for friends and family who’ve raved about it! (You’re welcome) The best parts? No beans (because let’s be real, nobody wants to deal with that after gas), it’s dairy-free (whoop whoop!), and it comes together in just 30 minutes (most of that is just chopping veggies!). THE GOODS 🧂- Ingredients:
- 2 pounds lean ground beef
- 1 red pepper (chopped)
- 1 yellow pepper (chopped)
- 1 large yellow onion (diced)
- 30 ounces canned fire-roasted diced tomatoes (Yes, fire roasted makes a difference)
- 6 ounces tomato paste (if doubling the batch, I still only use 6 oz)
- 2 cups beef stock (You can use broth but I prefer stock)
- 4 cloves of garlic (I like minced fresh garlic)
- 1 ½ tablespoon chili powder
- 1 ½ teaspoon paprika
- 1 ½ teaspoon onion powder
- 1 ½ teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
Additional Toppings: Cilantro, shredded cheddar cheese, hot sauce, Juantonio’s (RIP Juanita) tortilla chips, cornbread
THE ACTION 🥄- Instructions:
- Add your ground beef to a large pot. Use your spatula to crumble the beef. Cook on medium high, until browned, stirring occasionally. Drain any excess grease and set the beef aside.
- Cook onion, garlic, and peppers in the large pot on medium high. Add in all spices and stir until onions are translucent and peppers are soft. (This allows the veggies to get coated with all the seasoning.
- Add in all other ingredients, including ground beef. Stir thoroughly.
- Cover and let it simmer on low for 20-25 minutes, stirring occasionally.
- Taste, and add extra salt or pepper as desired.


THE END RESULT:
